Javitri is a reddish scarlet, thread-like substance that covers the nutmeg. It has a powerful perfume and a spicy flavour that tastes something like a blend of pepper and cinnamon. Mace is a frequent ingredient in South Asian cuisine and is a native of the Banda islands in Indonesia.
